My wife came to the USA on a fiance' visa. We are married now. Is she a nonimmigrant? Should we do our eligibility on a I-785 as nonimmigrant K-1 fiance or K-3 nonimmigrant spouse?

A nonimmigrant is a foreign national seeking to temporarily enter the United States for a specific purpose.
she is a non immigrant until she files for her green card, or whatever documentation is required to be a U.S. citizen

No, she is not considered a non-immigrant. Have you filed th I-130 yet, to petition for her conditional residency? I don't know what a I-785 is, are you talking about I-765, authorization for work? There is a petition for alien fiance, which is the I-129 form . . . you can go to the uscis.gov website, and check out the "Forms and Fees" link.

As your wife entered on a K-1 non-immigrant visa that is her status. K-3 doesn't even figure into it as that is not the visa she entered on.

best thing to do is call uscis immigration line 1800-375-5283 they are helpfull if you need any help with your paper work email me i will be happy to help i did all my paperwork myself
