Strawberries in Red wine
Fraises au Vin
2 lbs strawberries
2 cups red wine
1/2 cup sugar
1 stick cinnamon
Black pepper
Fresh mint leaves for garnish
Wipe off and stem the strawberries. Keep them whole if they are small; cut in halves or quarters if they are large. Pour the wine in a saucepan, add the sugar, cinnamon and 3-4 turns from the pepper mill. Bring to a boil; lower the heat and simmer until the syrup slightly thickens. Remove the cinnamon stick; add the strawberries and gently simmer for a few minutes. With a slotted spoon, remove the poached strawberries and distribute them into 6 bowls or glasses. Pour syrup over the strawberries and let cool; garnish with mint leaves and serve at room temperature.
