Bought some blueberries yesterday to tryon cereal and it was DISGUSTING (I feel sick even now). Does anyone have any healthy, preferably low-cal recipes for blueberries (i.e. muffins, bread, scones, etc.). Not very sweet stuff like pies or anything, though. Thanks.

Blueberry Snow

Ingredients:
1 package Unflavored gelatin (1 env)
1/4 cup Cold water
1/2 cup Boiling water
2 cups Fresh blueberries (rinsed)
1 teaspoon Lemon juice
2 tablespoons Granulated sugar replacement
2 Egg whites (beaten stiff)
6 Fresh strawberries(optional)

Directions:
Sprinkle gelatin over cold water in mixing bowl; set aside 10 minutes to soften. Add boiling water and stir to completely dissolve. (If gelatin does not dissolve completely, heat slightly.) Set aside. Combine blueberries, lemon juice and sugar replacement in mixing bowl or food processor and whip into a puree. Stir completely into gelatin mixture. When blueberry mixture is cool, thick and syrupy, beat until frothy. Fold stiffly beaten egg whites into blueverry mixture. Spoon into 6 serving dishes; refrigerate until set. Before serving, top with fresh strawberries. 1 serving = 1/3 fruit calories = 18

Here is a delicious blueberry muffin recipe that I love to make and have for breakfast because it is not overly sweet like some muffin recipes and its leaning towards the healthier side but it still tastes really good!!

1 egg, slightly beaten
1 cup plain nonfat yogurt or non-fat vanilla yogurt
1/4 cup margarine or butter, softened
1 1/4 cups all-purpose flour
1 cup quick-cooking oats
1/2 cup brown sugar, packed
2 teaspoons baking powder
1 teaspoon cinnamon, ground
1/2 teaspoon baking soda
1/4 teaspoon nutmeg, ground
1/4 teaspoon salt, if desired
1 cup blueberries, drained

Heat oven to 400F.
Line 12 medium muffin cups, 2 1/2x1 1/2 inches, with paper baking cups, or grease bottoms only of muffin cups.
Mix all ingredients except blueberries just until flour is moistened (batter will be lumpy). Fold in blueberries.
Divide batter evenly among muffin cups.
Bake 20 to 25 minutes or until golden brown.
Immediately remove from pan.

How about a blueberry barbeque sauce? It's delicious on chicken or burgers, and not sweet at all really:
Blueberry-Balsamic Barbecue Sauce

Try this sweet and tangy sauce next time you grill chicken, pork, or tuna. Add some sauce right at the end of cooking, and pass the rest at the table. If fresh blueberries aren't available, use 2 cups of thawed frozen blueberries.

2 cups fresh blueberries
1/4 cup balsamic vinegar
3 tablespoons sugar
3 tablespoons ketchup
1/2 teaspoon garlic powder
1/4 teaspoon salt

Place all ingredients in a saucepan. Bring to a boil; reduce heat, and simmer 15 minutes or until slightly thick. Remove from heat; cool. Place blueberry mixture in a blender; process until smooth.

BLUEBERRY CUPCAKES

1 1/4 cups flour
2 cup sugar
1 3/4 teaspoons baking powder
1/4 teaspoon salt
1/3 cup butter
1 egg, beaten
3/4 cup milk
1/2 teaspoon vanilla
2/3 cup blueberries
1/3 cup chopped unblanched almonds, toasted

Sift dry ingredients together to mix well. cut in the butter until mixture resembles coarse crumbs.
Whisk egg vigorously to incorporate air and make the eggs light. Stir in egg, milk and vanilla and combine thoroughly. Add to dry mixture and stir together (some lumps should remain) and add the blueberries.

Fill well greased muffin tins with batter until two thirds full.

Bake in a pre-heated 350 degree oven for 20 minutes or until done.

Makes 18 large muffins.

If you don't like the blueberries fresh, what makes you want to cook with them, especially if you don't want anything sweet or high calorie?

But if you must, here's a low fat muffin recipe:

INGREDIENTS
1 1/2 cups wheat bran
1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or use paper muffin liners. Mix together wheat bran and milk, and let stand for 10 minutes.
In a large bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mixture. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Stir into bran mixture until just blended. Fold in blueberries. Scoop into muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

2 tsp. PHILADELPHIA Light Cream Cheese Spread
2 RITZ Reduced Fat Crackers
10 frozen blueberries



SPREAD cream cheese spread evenly onto crackers; top each with 5 blueberries.
