Chicken salad... or Caesar for a green salad.

My cousin makes this wonderful salad that I make whenever I have company. It's always a hit.
Crunchy Spinach Salad

Salad:
2 qt spinach
2 C sprouts
1 can water chestnuts
4 hard boiled eggs
6 strips bacon
1 small onion

Dressing:
½ C brown sugar
½ C vegetable oil
1/3 C vinegar
1/3 C ketchup
1 T worcestershire

For me it's either Cobb salad, or this salad served at the Calisoga Inn. It's mixed spring greens with gorgonzola, candied pecans, and a house vinaigrette that's out of this world.

Ravier а la Danoise

3 Tablespoons olive oil
1 Tablespoon white wine vinegar
1/4 cup hot beef stock
3 medium potatoes, peeled
2 shallots, finely chopped
3 Tablespoons chopped parsley
1 cup cooked, flaked salmon (or use one can of salmon, drained and flaked)
salt & freshly ground black pepper
mayonnaise
PREPARATION:
1. Bring a large pot of water to a boil.

2. Place the potatoes in another pot and sprinkle with 1 teaspoon of salt. Pour the boiling water over the potatoes. Cover and cook over medium heat until done (20 to 30 minutes).

3.Drain the potatoes and slice about 1/4-inch thick. While they are still hot, sprinkle with salt and pepper and add the shallots. Pour over the beef stock, oil, wine vinegar and toss to coat.

4. Allow to stand at room temperature until all the liquid has been absorbed.

5. Add 2 tablespoons of the parsley and toss.
To serve:
Place the potatoes in a large salad bowl. Sprinkle the flaked salmon on top. Coat the salmon with mayonnaise and then sprinkle on the remaining tablespoon of chopped parsley.

CHICKEN AND BEAN SALAD

2 cups cooked chicken, shredded
1 can cannellini beans
1/4 cup green onions, sliced
1/3 cup miracle whip salad dressing
1 tablespoon soy sauce
1 teaspoon freshly grated ginger
2 teaspoons rice vinegar
1/4 teaspoon dijon mustard
2 garlic cloves, minced
1/2 red onion, sliced thinly
1/8 teaspoon cayenne pepper (pinch)
lettuce leaves

Combine chicken, beans, onions, in a salad bowl.
In a small bowl or blender, combine ginger, soy sauce, vinegar, mustard, garlic, and mayonnaise; blend.

Toss with chicken mixture and serve over lettuce leaves.


WHITE BEAN SALAD

1/2 pound dried white beans
1 onion, chopped
3 to 5 cloves garlic
1 quart water
1 bay leaf
salt and pepper to taste
6-8 tablespoons freshly squeezed lemon juice
1/2 teaspoon cumin powder
2 tablespoons olive oil
1/4 teaspoon oregano
1/4 teaspoon basil
6 tablespoons cooking liquid from beans
4 spring onions
1/4 cup chopped fresh parsley

In a saucepan, soak the beans in 1 quart of water for three to four hours, then drain. Add onion, garlic, 1 quart of water, bay leaf, and oregano and basil.
Bring to boil, reduce heat to low, cover and simmer until beans are tender, approximately one hour. Do not add salt to the cooking water or the beans will take longer to cook.

To make dressing, combine lemon juice, cumin, salt and pepper, olive oil, and 6 tablespoons cooking liquid from the beans. Pour over beans and mix well. Refrigerate several hours.

Just before serving, chop spring onions, using both white and green parts, and add to salad.

Optional: Garnish with tomato wedges, marinated artichoke halves, and fresh basil leaves.

One of the best salads I ever had is a bag mix from Costco. It's got spring greens, dried cranberries, feta cheese, pecans, and white wine vinegar dressing... it's awesome! And cheap!
