You should try using Velveeta cheese either the Mexican style or regular Velveeta, add a small amount of milk and salsa as you normally do.

Instead of the milk you can use cottage cheese, cream cheese or sour cream to make it creamy and melt good. The best cheese to use is velveta but it is a processed cheese food not real cheese.

CREAM CHEESE DIP
pkg. cream cheese
1-2 lbs. hamburger
1 large onion
1 green pepper
pkg. taco seasoning mix
bottle of salsa
mozerella cheese
Spread cream cheese over the bottom of a 10x12 pan.
Brown hamburger, add onion (cut into bite size pieces), and add green pepper (cut into bite size pieces.
After hamburger, onions, and green peppers are cooked, sprinkle on pkg. of taco seasoning mix.
Mix until it is well combined. Pour hamburger over cream cheese mixture. Top with a bottle of salsa.
Cook at 350` until salsa starts to bubble. Sprinkle with mozzarella cheese and return to oven. Continue to bake until cheese melts.
You can use chips to dip or spread onto crackers.

you must always melt the cheese. but use a more semi-soft cheese that has a good melting consistency. for example, you can use velvetta but its processed so more nonprocessed cheeses may give you a better flavor but it does melt very smoothly. you can use pepper jack for some spice and good meltings, gruyere, fontina, or appenzell, mozzerella (may be bland unless you smoked it). use good melting cheeses overall. a jarlseberg may be too smokey like a swiss, but it has a good melting consistency. an edam should be great also
