It depends on if you are referring to the size of the boat, the decks, the passengers, crew, etc. But in general
Royal Caribbean: The biggest is currently Freedom of the Seas, which is the biggest in the world, at the moment. In the works in Genesis which will almost double the size of Freedom of the Seas. Then Independence of the Seas and Liberty of the Seas is supposed to be the same size as Freedom.
The smallest is Empress of the Seas.
Carnival: The Biggest is Currently the Destiny, as far as passengers. Overall Liberty, Valor, Glory Congquest and Freedom are all tied pretty much as far as size. Soon, the Splendor will be their largest ship.
The smallest is Holiday.

The largest ship that Royal Caribbean has is Freedom of the Seas and this ship is 160,000 tons, and 1,112 feet in length. The smallest ships is Empress of the Seas weighing in at only 48,500 tons and 692 feet in length.
The largest ship in Carnival's fleet is the Conquest class which is " Carnival Conquest, Carnival Valor, Carnival Liberty, Carnival Glory and the newest ship which will have it's maiden voyage in just a few days on March 5, the Carnival Freedom. All of the ships listed in the Conquest class are 110,000 tons and 952 feet in length. The smallest ship is the Holiday at 46,052 tons and 727 feet in length. I can't say i know much about Royal Caribbean.
But I know Carnivals largest ship is the Valor and the Celebration is the smallest. Try the website www.vacationstogo.com then click cruise ships and reviews and it will tell you the # of guests and how big the ship is.
