This is my favorite Corned Beef and Cabbage recipe, I have been making this for years for guests on St. Patricks Day.

Corned Beef and Cabbage

1 (4-pound) corned beef brisket with seasonings packet that comes with corned beef.
4 to 5 medium potatoes, peeled and halved
6 carrots, halved
1 large head of cabbage, cut into 8 wedges
Water and beer to cover meat make sure you cover with enough liquid so it doesn't cook dry.

Remove corned beef from package. Rinse in cold water. Place meat and seasonings that come with the corned beef in a large dutch kettle with lid. Cover with water, ( I like to use Irish beer like Guinness for half of the water, bring to a boil and cook 30 minutes. Remove the residue that will float to the top.
Transfer to a 300* oven for about 4 hours, or until tender when pierced with a fork. Remove corned beef from kettle (keep liquid) place meat on a carving board or platter. Cover with foil to keep warm. Let the meat set for 10 to 15mins. before carving so natural juices can settle back into meat.
To kettle, add potatoes cabbage and carrots. Cook 20 minutes; or until vegetables are tender. Slice corned beef, against the grain. Place on large platter; arrange vegetables around beef.
Makes 6 servings.

Well I cheat and used the canned corned Beef. I cut the taters up then chop up the cabbage and then throw everything along with some salt/pepper and seasoning in a big pot and let it cook for about 4-6 hours.
