I was at an Italian restaurant the other day and they had a seasoned olive oil to dip bread in, said something about there used to be no refrigeration to keep butter, so they used olive oil instead.

Because olive oil is in greater abundace in that region than butter. It's practically a cultural icon. Lots of olives grow in the mediterranian
