My favorite is Fix-It and Forget-It Cookbook by Dawn Ranck. It has over 800 recipes. Many are variations of the same recipe so you can experiment a little. Many are very simple (which I like).

I don't but I can tell you how to find a good one. Go to a used bookstore or two and look through the cookbook section. Find a book that looks like it's been well-used -- not one that's in pristine condition because it's never been touched but not one that's been abused either. Look through this one and see if you like the recipes. If so, look around for another copy that really hasn't been used, unless the well-used one has handwritten notes in it that you'd like to have of course. You'll be surprised at how effective this method is for finding good cookbooks.
