My son (18 months) would just eat it cut into little pieces...if your little one won't you could try mixing it into some mac and cheese or put it into some mashed potatoes.
You could also make a casserole with the leftover chicken and try to get the little one to eat the casserole...

Kids love to eat with their fingers so try this.
Chicken Salad.
Take a shell of lettuce. (preferably Iceberg)
Add some shredded chicken
Asparagus spears, grated cheese and carrot and roll it into a sausage.
Add some Kiwifruit peeled and cut into wedges, also a tomato and egg cut the same way
You will have a nice colourful plate of nice food
Try making a flan with shredded chicken veges and eggs.
Cheese roll.
Take some fresh white bread, and butter, add some shredded chicken down the centre third. Fold the out side over, one on top of the other. Press flat and place under the grill to toast both sides. Spread some butter on the top and serve hot.
You could also use a sandwich press if you have one
Substitute chicken with cheese or mince.
They make a wonder full snack food for adults also and are peculiar to the South Island of New Zealand and I am looking forward to see if you get a similar suggestion from elsewhere in the world

I'm a mother of two an I bake chicken all the time. An when we have leftover I usally make chicken salad.

Mix it with a jar of alfredo sauce and serve over pasta, make chicken salad, with grapes and apples, celery and some low fat mayo. Chop it up and put it on a frozen cheese pizza with some extra cheese. Make noodle soup. Or mix it up with some egg noodles undilluted cream of mushroom soup, or cream of chicken soup, maybe some veggies that they will eat, put it in a cassarole dish and crumble some chips on top and bake to eat thru. You can even do this with the box mac and cheese.

I often make homemade chicken pot pies. I use 1 bag of frozen peas and carrots. 1 small finely diced onion. 1 can of cream of chicken soup. Throw in a pie dish with premade pie crust. Bake at 350 degrees for 30 minutes. The kids love it.

Does he or she like spicy food?
This stew is made of leftover chicken.
200 g pan-fried or grilled chicken meat
1 small yellow onion, chopped
1 clove garlic, chopped
oil
1 green sweet paprika
1 tablespoon flour
1 ½ tablespoon tomato purée
1/2 teaspoon coriander powder
1/2 teaspoon caraway powder
1/2 teaspoon ginger powder
1/2 teaspoon cardamon powder
some grated nutmeg
some chili powder
2 dl chicken stock
2 dl yoghourt
1/2 teaspoon brown sugar
salt, black pepper
parsley, chopped
Cut chicken meat and paprika into pieces
Heat the oil in a sauce pan.
Add onion and garlic, fry until golden brown.
Fry the chicken meat and paprika with onion.
Add flour, tomato purée and all spices, stirring.
Add chicken stock.
Simmer for about 3 - 5 minutes.
Add yoghourt, stirring. Don´t boil!
Salt, pepper and brown sugar to taste.
Serve over fresh cooked pasta adding the parsley.

Mike it up and get some bread for chicken sandwiches,
Put it in soup, If you like soup, Oh, and you know whats good? Put it in lasagna!
If you like Curry, you can get some spices, some milk, make chicken curry!
And don't forget all sorts of casseroles and dishes, put some on a cracker for a quick appetizer!
Of course there are all sorts of things you can do with it!
Experiment!

Boil pasta (whatever kind you like, we usually use egg noodles)
1 can cream soup
1/2 can milk
1/2 cup mayo
1/4 cup onion
1 can peas
2 cans of tuna
1 cup shredded cheese
Just mix everything together, top with cheese and bake for about 25-30 minutes at 350 Degrees. I usually add whatever spices sound good at the moment, and occasionally add a small can of mushrooms also.

A tasty chicken casserole recipe made with packaged long grain and wild rice, along with seasonings, mushrooms, and chopped vegetables.
INGREDIENTS:
6 chicken breast halves
1 1/2 cups water
1/2 cup dry white wine or sherry
1 1/2 teaspoons salt
1/8 teaspoon pepper
1/2 teaspoon curry powder
1 medium onion, quartered and sliced
2 ribs celery, sliced
12 ounces sliced mushrooms
4 tablespoons butter
1 package (6 ounces) Uncle Ben's Long Grain and Wild Rice
1 cup sour cream
1 can (10 3/4 ounces) cream of chicken soup or cream of mushroom soup, undiluted
1/2 cup slivered blanched almonds
PREPARATION:
Put chicken breast halves in a large skillet with water, wine, salt, pepper, curry powder, onion, and celery. Cover and simmer for 1 hour. Remove from heat and strain, reserving the broth. When cooled enough to handle, remove meat from bones, discarding skin.

Cut into bite-size pieces.
Heat butter in a large skillet over medium-low heat; sauté mushrooms until lightly browned.
Cook rice mixture with seasonings according to package directions, using the reserved broth as part of the liquid for cooking the rice.
Combine chicken, mushrooms, and rice in a large 3-quart casserole. Combine sour cream and soup; blend into chicken and rice mixture. Top with the slivered almonds. Cover with lid or foil and bake at 350° for 45 minutes. Uncover and bake for 15 minutes longer. Serves 8.

There's plenty of things you can do with it.
* Chicken Tacos. Add some tomato sauce to chopped up chicken (instead of meat). My son likes it.
* Chicken Stir fry (mix chopped chicken, veggies, rice, and egg)
* Spagetti Bolagnesa (shredded chicken on noodles with lots of spagetti sauce also add sauteed onions and carrots to the mix)
* Chicken sandwiches
* Chop in up and reheat with soysauce and serve with rice or mashed potatoes.
* Heat with bar-b-que sauce and serve on a roll.

well, for a 2 year old make chicken nuggets, really easy to make\
with matzo meal & water mix and deep fry....Not to healthy,
but she might also like chicken soup with a small white potato.\
or if she likes gravy, how about a nice chicken pot pie....
