I don't see why not...I'm sure it'll taste good.
I usually do this:
1/2 cup ketchup
3 tablespoons dark brown sugar (or about 5 if you use light brown)
1/2 teaspoon mustard powder (or a squirt of regular mustard)
Mix it all up and top the meatloaf with it prior to baking. I usually double the recipe and have extra for dipping and leftovers.

Yes. Sounds good for an italian meatloaf. Often times I use ketchup. No added spices needed.

Yes you can, and it really tastes good. Also take a fork and poke holes into the loaf so the soup can run inside.
