cut your veggies in thin slices, add a little salt and pepper and spray them with some oil. grill them on teh barbecue or in the oven on both sides
once done, jsut add some lemon oil and a little garlic crushed... you can haev them warm or cold. any veggie goes...
otherwise you can try them in a gratin, but then it's a complete meal...

One of the easiest and healthiest dishes is rice and vegetables.
Cook the rice foll owing the instruction on the packet.
Boil some frozen mixed veges.
Poach a nice piece smoked firm fish in milk and when flaky remove from fry pan, reserving the milk
Melt some butter in the pan some plain white flour and cook out until it is cooked out, then return the milk gradually at first stirring it in to make a nice smooth sauce.
Flake the fish and return to pan.
To serve mix rice and veges together and plate up. If you want to make it look really flashy, pack the rice into a small bowl and then invert it onto the centre of the plate. Carefully remove the bowl, and you should have a nice mountain in the middle of the plate. Spoon out the fish and around the rice and you have a nice looking meal which is good for you and cheap to make

Veggie lasagna is great! Try snacking on a mix of raw veggies and dip. You can buy veggies already cut up and ready for dipping. Use you favorite salad dressing as your dip. Or, for a change, use salsa, refried beans, and melted cheese for your dip. Good stuff and very healthy!
Use fresh or frozen veggies for cooking, and use the microwave to cook them. Cook them so their just done, with a little crispiness left. They'll keep their flavor and look more appetizing.

Make up a pasta dish. Ok, first off cook whatever meat you are going to use in the meal on wok (if using any), add in vegetables you want to use (I'd suggest capsicum, mushroom and onion) plus pinenuts (sometimes found in spices section if not near nuts, weird I know) and make sure you stir regularly to prevent burning of the pine nuts. Then add a can of tomato and spinach pasta sauce, along with some pepper and three tablespoons of cottage cheese for flavour. Serve with pasta and some parsley (decoration so optional) and parmesan.
Also can make up mexican, fairly simple. Buy tortilla wraps, some burrito sauce plus meat and veggies. fry the meat and veggies in a tablespoon of garlic then add in the sauce to cook with it. Put the mixture into a wrap, add a bit of cheese, folder (Seal with sauce if need be), put some additional sauce, not too much that it will be soggy, plus a little bit of cheese, heat it in microwave to make sure cheese is melted, say 45 seconds, plus put a side of rice on the side.
Then I have a stirfry I quite like, its vegetarian, put veggies on wok (i.e carrot, onion, mushrooms, capsicum etc - I usually put tofu but not necessary), fry them in say two teaspoons of garlic, then same amount of coriander (spice comes minced in tube like the lemongrass), lemongrass, and then there is ginger. Next comes the vegetable stock, add about 100 mls, a teaspoon of soy sauce, two teaspoons of curry powder, 140 mls of coconut cream (or more if required), juice of a quarter of a lime and then some dessicated coconut for flavour. Serve with rice/noodles.

buy romaine lecture cut in small piece
1 tomato cut in small dice
1 tablespoon on Cesar dressing
now put into a bowl and mix it
now u have a well balance diet

raw veggies with a lite dip is actually really good, and its best for you.
other then that just try steaming them with seasonings of your liking, being careful never to over cook them.
watch the salt!
