Dancing is against some of our family's religious beliefs and we would like everyone to be comfortable but also have fun. The wedding will be in the afternoon with an hor d evors and dessert reception at an apple orchard in may.

Next to the sign-in book you can have a photo booth. There are services that will bring a real one for you, but you can do it yourself for much cheaper. Just get a Polaroid camera and have one (or two) of the members in the house party help run it. I once saw a bride and groom who provided silly hats for the guests-- they loved it! Also, an ice cream sundae station is a fun (and tasty!) way to entertain your guests. I love, love the idea of a carriage ride...

After your ceremony, maybe you can arrange for the orchard to provide a tour or demonstrations for your guests while you take pictures. Then as they gather for the reception, provide some music for your guests to listen to while the eat and mingle. A nice quartet would go well with the atmosphere at the orchard. Other than that, I don't think you need any other form of entertainment besides the standard wedding activities (toasts, cake cutting, bouquet toss) and greeting each guests personally in between. But if you would some other form of entertainment, maybe arrange for an ensemble or choir of christian/gospel singers perform. That's what we were going to do but we had spacing limitations.

We had our wedding at a historic mansion. After the ceremony we provided everyone with a tour while we finished pictures. Then we just provided background music while everyone ate and talked. We also had the standard wedding activities throughout the reception and greeted each table during the reception. Our guests really loved having the opportunity to talk with both of us and take pictures with us. Since we didn't have dancing either for similar reasons, we just had a shorter duration for our reception, about 2 1/2 to 3 hours. Even though we didn't have dancing, everyone had a great time catching up with each other, eating, and listening to the music. We still get comments to this day on how much people enjoyed our wedding.

What a funny question... I find it hard to imagine people dancing in an apple orchard in the first place! How about some strolling musicians to provide some entertainment? Other than that, visiting and eating will probably provide plenty of amusement.. just don't expect your reception to be a really long drawn out affair.

Is it possible to get a horse and carriage for rides through the orchard?
That would be nice.

Call the "church" of the folks who wouldn't enjoy the dancing. Most have a wedding coordinator who could give you ideas.
