I have 1 lb of ground beef (extra lean) and a grill. I need someone to give me a good hamburger recipe. This is to make hamburgers on a bun, I don't want meat loaf or other things. IE I have used the on on the back of the Worcester sauce and that turned out okay. Can you all give me some more to try?

What defines a burger is what you put on it, not just the meat. While the meat itself is important, great meat on a plain bun isn't going to taste that great.

The meat:
Season the meat. Use whatever season you like. I personally like "Montreal Steak seasoning" which can be found in the spice aisle in any grocery store.

The bun:
Pick out a high quality bun. Don't use something mass produced in the bread aisle of your store. Go to the bakery and see what they have available.

The Vegetables:
Everybody puts lettuce and tomato on their burger. Try a little different.
Instead of just using green leaf lettuce or romaine lettuce, try chopping up some iceburg lettuce finely.. It'll have a better texture than just throwing a leaf of lettuce on. Then put on two tomato slices. Season them with a little salt and pepper. Then throw on whatever other vegetables you want. Peppers, onions, pickles, etc. The vegetables should go on the heel of the bun before the burger.

The Condiments:
If you like ketchup and mustard, that's fine. But try something different! Mayonaise is really good on a burger. Or try making Chipotle mayonaise by mixing a little chipotle powder (spice aisle) with the mayonaise. BBQ sauce is really good too.

The cheese:
Whatever you do, do NOT use American Cheese. It's proccessed cheese, which basically means it's synthetic! Use something that fits the other toppings you're using.

Mushrooms - Swiss Cheese
Anything spicy - Pepper Jack Cheese
Bacon - Cheddar Cheese
Sauteed Onions - Provolone Cheese

Other stuff:
Try adding any of these things to make your burger better:
Sauteed mushroms, sauteed onions, fried onion rings, bacon, ham, jalepenos, coleslaw. Use whatever you want!

The way burgers should be eaten is one great burger is your meal, with whatever you want on the side. It shouldn't be "picnic style" where you eat a bunch of crappy small burgers.

The simplest burger is the best. Try to touch the meat as little as possible. I like my burgers rare on the inside with grill marks on the outside, so what I do is after the meat is seasoned and shaped into patties, I poke a hole in the top with my finger and put something cold inside - either a cold piece of butter, some cheese or a piece of an ice cube - then cover the hole back up. I usually smear some bottled grilling sauce (I like lemon/garlic) and ketchup over the top of the pattie and grill on both sides - I also like to grill a slice of onion while the burgers are cooking. Also, don't move them when they first go on the grill - turn them when you think they are cooked halfway.

In a bowl mix together beef, diced onion, mixed herbs, curry to taste, Worcestershire sauce, tomato sauce, bread crumbs and an egg to help bind.

Roll up your sleeves and get stuck in with clean hands to really mix every thing together, and then form into patties.

Also it is good for a meat loaf, meatballs for spaghetti, croquettes etc.

Ground Pork or Chicken make an excellent alternative

Try using a pack of seasoning like Onion soup mixed in with the hamburger then pour BEER on them while u r grilling them.

The Best Hamburger Recipes
I suppose it's about time to let the family secret out of the bag so others may enjoy the juiciest, most delicious hamburgers ever created by humankind. Come on in and taste pure hamburger heaven.

Are you ready to build the most scrumptious, delicious hamburgers you've ever had before in your life? Are you just looking for a new way to make a burger? Something a little more creative? Well, you're in luck because I'm about to show you how to design your own burger that suits your own specific taste. Follow along, it's real easy to do.

NOTE: This recipe IS meant to be tinkered with!



Basic Ingredients:

Any amount of Ground beef (I prefer 80/20)
Breadcrumbs
1 egg

Then gather whatever else you want to put in it.
I want this particular batch to be spicy and sweet so I will also be adding:

Worcestershire Sauce
Tabasco Sauce
Crushed Red Pepper

You can put almost anything into a burger, from peanut butter to fresh salsa to cheese. Experiment! What do you usually add TO your burger? Throw in some diced onions, peppers, even ketchup!



STEP 1 - Wash your hands and your countertop and plop a brick of your favorite thawed ground meat down on it. (Ground beef is being used above)



STEP 2 - Flatten and spread the ground hamburger meat so there is more surface area exposed.



STEP 3 - Add the egg along with whatever other ingredients you will be using. In the above picture I have added the egg, Tabasco sauce, worcestershire sauce, and a generous amount of crushed red pepper. No bread crumbs yet.



STEP 4 - Begin mixing all of the ingredients into the meat by folding the hamburger meat over itself and working it together with your hands. Fold and press.



STEP 5 - Continue kneading the hamburger meat mixture until you are satisfied that the ingredients are evenly distributed.



STEP 6 - Flatten the hamburger meat mixture against the counter once again.




STEP 7 - Lightly cover the top of the hamburger meat mixture with breadcrumbs and then mix it into the meat in the same way that you just did the other ingredients. The amount of breadcrumbs will vary from batch to batch depending on the amount of liquid ingredients you add. The idea here is to get the meat to a consistency where it holds together really well but is not overly wet or dry. When you can work a piece into a tight ball and plop it down on the counter without it deforming too much or breaking then you've got the right mix.



STEP 8 - Work the hamburger meat mixture into a symmetrical 'ball'.




STEP 9 - Split the ball up into equal sized portions. These will be your patties so decide how big you want your burgers to be. You can do this by hand or with a large knife. I find the knife is easier to get a good separation with.



STEP 10 - Take each hamburger meat portion and work it into a tight ball. Cup the meat between your hands and squeeze it as hard as you can to pack it together tightly.



STEP 11 - Once you have a tight ball of meat in your hand, slowly work it between your palms into a flat, patty shape. If the edges start to split, use the crease in the center of the palm of your hand to 'pinch' and work them back together. I always make more than I am planning on immediately cooking, so the extra hamburgers can fit between sheets of wax paper and then into a freezer bag to be frozen for later.









STEP 12 - Cook up some of these burgers using your favorite method, and serve on a toasted bun with the condiments of your choice. Mmmmmmm. I generally either use my trusty George Foreman or the outside BBQ.




Wow, was that some easy stuff, huh?
"Joe-Burgers"

2 pounds of Ground Sirloin
2 tablespoons of MSG (Accent Meat Flavorizer)
1 1/2 tablespoon of Garlic Salt
1 tablespoons of Dry Mustard
2 tablespoons of Minced Unions (optional)
2 tablespoons of Worcestershire
1/2 Cup of Water

Mix up with fork, touch very little Broil or Grill until done.
(Flip only once if possible. Makes about six burgers. Cut recipe in half for only three).

"Joe's Steak Rub"

Mix equal parts of:
MSG
Garlic Salt
Paprika

Sprinkle and/or rub over steak.
Poke with fork and add Worcestershire.
Repeat for other side of the meat.
Mushroom Swiss Burgers
2 4-ounce cans mushroom stems and pieces, drained and chopped
1/4 cup chopped green onions
1 tablespoon chopped parsley
2 tablespoons butter

1-1/2 pounds lean ground beef
1/4 cup dry bread crumbs
1/4 cup water
1/2 teaspoon salt
1 teaspoon lemon pepper
3 tablespoons grated Parmesan cheese

6 slices Swiss cheese
Sauté the mushrooms, onions and parsley in the butter over medium-low heat until onions are softened. Remove from heat and keep warm. (Or make in advance and reheat after grilling burgers.)
Combine the ground beef, bread crumbs, water, salt, lemon pepper and Parmesan cheese, mixing well. Shape mixture into 6 patties about 4 inches in diameter.

Grill patties about 4 inches from coals or heating element, turning once, 5 to 7 minutes on each side for medium, topping each patty with a slice of Swiss cheese during last minute of grilling.

Spread a heaping tablespoon of the mushroom mixture on each patty. Serve on grilled hamburger buns. Makes 6 burgers.

well you know the packages of the hidden valley ranch dressing (the powder) that you have to mix yourself, that is the best if you just add it to the meat and let it sit for about ten mins also a package of dry french onion soup mix is sooooo good i mean great!

you could cut onoins up and put them inside the meat or make crackburgers lke i do
