I have two favorite things to do with mango... the first is to add to homemade salsa....

tomatoe, fresh chopped mango, onion, chilis (your favorite pepper), cilantro, fresh lemon juice, sea salt. This is GREAT on chips as well as a compliment to chicken breast.

My other favorite way to enjoy mango is to take slices and dip into a mixture of freshly ground sea salt and fresh ground pepper. This is how I learned to eat them in Guam.

With both of these ways it is best to get them before the are soft and ripe. The harder and more tart/less sweet they are... the better.

Mango Salad


INGREDIENTS:
2 large firm mangoes, peeled & shredded
3 tablespoons thinly sliced green onions
1/3 cup lime juice
2 tablespoons fish sauce, or use soy sauce if necessary
1 teaspoon sugar
1 small clove garlic, minced
1 small hot chile, such as serrano, seeded, minced
1 pound shrimp, (25 to 30 per pound)
2 cups greens
lime slices, for garnish
PREPARATION:
Combine green onions, lime juice, fish sauce, sugar, garlic, and chile in a bowl. Mix in shredded mango. Chill while preparing shrimp.
Shell and devein shrimp and rinse well; divide into 4 portions. Thread 1 portion onto a slender metal skewer. Run a second skewer through shrimp 1/2 to 1 inch from the first skewer, to keep them flat. Repeat with remaining shrimp. Grill shrimp on a medium hot grill, covered, for about 3 minutes on each side, or until opaque but still a bit moist in the center of thickest parts.
Place greens on a platter; mound mango mixture onto the greens using a slotted spoon. Place shrimp over the mango salad and garnish with lime slices, if desired.
Serves 4.

Mango Cobbler
INGREDIENTS:
2/3 cup sugar
1 tablespoon cornstarch
1 cup water
3 cups sliced mangos
1 teaspoon lemon juice
1 1/2 teaspoons butter
1 tablespoon granulated sugar mixed with 1 teaspoon cinnamon
1 cup flour
1/3 cup sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons shortening
1/2 cup milk
PREPARATION:
Mix sugar and cornstarch in saucepan , gradually stir in water and fruit and lemon juice.Heat, stirring well. Pour into 1 1/2qt. Baking dish; dot with margarine and sprinkle sugar cinnamon mixture over the top. Stir together flour, sugar, baking powder and salt.Cut in shortening until mixture looks like meal. Now stir in milk. Mix well.

Drop by spoonfuls on to hot fruit. Bake at 375° for 20 to 30 minutes. Serve warm or cold, with ice cream or whipped topping. Makes 6 to 8 servings.
