This is a delicious kiwi loaf...it is sososo yummy..make sure your kiwis are ripe for best results!

2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or margarine (soften)
2/3 cup sugar
2 eggs
1 cup peeled mashed kiwi fruits (ripe)

Preheat oven to 350 degrees. Grease and flour a 9 X 5 X 3 loaf pan.
Sift together flour, baking powder baking soda and salt and set aside.
In large bowl cream butter and sugar together until light and fluffy. Add eggs one at a time to creamed mixture beating well after each one. Stir in kiwis. Fold in dry ingredients gently, stirring only until batter is completely moistened. Spoon batter into pan and bake for 55-65 minutes or until toothpick inserted comes out clean. Cool for 10 minutes on wire rack. Remove from pan and continue cooling on rack.

Kiwi Banana Pudding

1 1/3 cups cooked rice
1 1/3 cups skim milk
1 teaspoon vanilla extract
2 tablespoons low-calorie sugar substitute
1 ripe banana
1/4 cup whipped cream
2 kiwi fruit, sliced
Combine rice and milk in small saucepan over medium heat and cook until thick and creamy, about 5-8 minutes. Remove from heat and cool slightly. Stir in vanilla and sugar substitute. Mash banana and fold banana and whipped cream into pudding; refrigerate before serving. Garnish with kiwi slices.

Kiwi Parfait
2 kiwis, 1 sliced and 1 finely diced
1 small angel food cake, cut into small circles
1 pint heavy whipping cream, whipped to light peaks
1 pint of pre-made chocolate ganache, store bought
2 each strawberries, raspberries and blackberries

In a Champagne glass, begin layering the sliced kiwi, cake and whipped cream until you reach the top of the glass. Finish with a spoon of cream and chopped kiwi. In the microwave, melt the chocolate according to directions. Fill a small piping bag with the chocolate and pipe a message onto the serving plate. Arrange the berries around the message and place the parfait in the center. Serve chilled.

Kiwi Sherbet
1 pound 6 ounces kiwis, peeled and pureed
1 pint of sugar syrup (use an extra 3 tablespoons if kiwis are tart), recipe follows
1 to 2 teaspoons lemon juice
1 egg white (optional)

Place the pureed kiwis, sugar syrup, and lemon juice in the ice cream machine freezer. Begin freezing according to manufacturer?s instructions.
If you're using the egg white, whip the egg white until very frothy, but not yet at soft peak. Stop the machine briefly and fold in the egg white. Continue freezing until entirely frozen.

Remove to a sealable container. Keep in the freezer.


Sugar Syrup:
1 pint water
2 cups granulated sugar

Place both in a saucepan. Bring to the boil. As the liquid clears, cover and let cool. Store in the refrigerator; will keep for weeks.

*Since this ice cream is made without stabilizers, preservatives, or frothing agents, you should not store for more than 1 to 2 weeks.


Turkey-Mixed Greens Salad with Strawberries, Kiwi and Cashews in Honey-Sesame Dressing

1 (1 1/2-pound) reserved cooked turkey tenderloin, sliced
4 cups mixed greens
1 cup sliced strawberries
2 sliced kiwi
1/2 cup dry-roasted, salted cashews
1/2 cup reduced-sodium chicken broth
2 tablespoons honey
2 teaspoons sesame oil
2 teaspoons honey mustard
Salt and ground black pepper

Cut turkey into bite-size pieces and set aside.
Arrange the mixed greens on salad plates or large serving platter. Top with turkey, strawberries, kiwi, and cashews.

In a small bowl, whisk together broth, honey, sesame oil, and honey mustard. Season to taste with salt and black pepper. Pour mixture over turkey and spinach salad.

It is illegal to hunt and kill the flightless bird, regarded as an endangered species.

It our native bird and it is from them we get the nickname as being Kiwi's.
