Fast and delicious Yorkshire Pudding
Comes out perfect and crisp every time.
Cooking time 10 to 30 mins
Ingredients
115g/4oz plain flour
salt
4 eggs
300ml/10 fl oz milk
4 tbsp vegetable oil
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Sift the flour and a pinch of salt into a bowl. Make a well in the centre, then pour in the beaten eggs and gradually draw in the flour.
3. Add the milk and whisk until you have achieved a smooth batter, the consistency of single cream.
4. Season to taste.
5. Divide the oil between two 12-hole bun trays and heat on the top shelf of the oven for 4-5 minutes.
6. Transfer the batter to a jug, then pour into the hot oil so that it comes halfway up the sides.
7. Bake the Yorkshire puddings for 15 minutes until well-risen, crisp and golden brown.
8. Pile into a warmed serving dishes and serve at once.

Got this from Emeril's show and it was very fluffy and crispy and easy to make.
1/3 cup plus 4 tablespoons of beef roast drippings
6 eggs
2 cups milk
2 cups flour
1 teaspoon salt
Preheat the oven to 375 degrees F. Grease 10 cups of the muffin tin with a teaspoon of the dripping fat. In a mixing bowl, whisk the eggs until frothy. Whisk in the milk and remaining drippings. In a mixing bowl, combine the flour and salt together. Whisk the egg mixture into the flour mixture and mix well. Pour the batter into the prepared muffin cups. Bake the pudding for about 50 minutes, undisturbed. Remove from the oven and serve hot.

Gran's recipe from our Yorkshire relitives.
4 oz flour sieved, 1/2 pint of milk, 1 egg.
beat egg and add milk whisking vigouresly then slowly sieve in flour as you wisk. Leave mix to stand for 1/2 an hour before use.
Pre heat oven to 220 normal 200 fan degrees celcius or gas mark six.
Put piece of beef dripping in tins and place in oven for 10 minutes they should be smoking when you take out the tray. Spoon in mix or use jug as I do and return to oven for 20 minutes. Should be good.

Use ice cold water to make the batter. Whisk well, then rest before using. Also cook on high heat at least Gas mark 7

Very, very, very, hot oil. It should be smoking when you add the batter, you need a hot oven to cook them, hence why it is the last thing cooked on a Roast
