the sacrifices were meant to be eaten by the priests. they take care of our spiritual health, so we take care of their physical health by giving them the best of our crops and herds. since the temple was destroyed, their are no priests, and no reason for the sacrifice.

Yeah, no Temple, no more sacrifices, and when there third Temple is built, we shall see if there will be again or not... perhaps something less bloody will replace it.
