I make something for my kids called "Pizza Suprise"... the reason it's a suprise is that you never know exactly how it will turn out.... because it's never the same twice. What I do is go to my favorite grocery store and ask for the "cheese ends" at the deli counter (all the end cuts that don't quite make it into whole pieces). They throw all kinds of different cheeses into a single package and I get it at a discount. You may get some mozzarella... but you may also get some provelone, swiss, havarti, jack, american and a few other varieties. I chop and shred the cheese and put it on the pizza and enjoy with the kids.
My single favorite kind of pizza cheese is a proprietary blend made for St. Louis Style pizza... it's called provel (not to be confused with provelone). It isn't stringy like mozzarella but gooey and tangy.

I use a mixture of cheeses. I like provolone, fresh parmesan a little mozzarella and then I will pick up a cheese I've not used and add that. One that supprised me that I liked was blue cheese!

You can always use almost any kind of cheese to suit your taste. I've had goat cheese on my pizza. It was one of those gourmet wood-fired ones you get at quirky eclectic pizza places. On tv cooking shows, I've seen them use mascarpone for a dessert pizza. But, I've always liked mine with provolone made by a local pizza place (our family's favorite).

Feta - a local pizzeria here makes an awesome pizza with pesto, diced tomatoes, sliced black olives and a bunch of crumbled feta. Simply the best.

fresh mozzarella, in the deli case, yum! very different from the mozzarella you are thinking of. asiago or goat cheese is good too.
