Yes they can, you cannot expect any privacy when in custody, remember you have the right to remain silent, anything you say can and will be used against you in a court of law (Miranda).
Most Police cars are miked and interrogation rooms have video and are miked. This is for your protection as well as ours.

The vast majority of the time, the answer is Yes.
Some states (US) do have more restrictive laws regarding the recording of conversations but MOST states only require that one party that is involved in the conversation be aware of the recording.
MOST states limit the surreptitious recording of two unknowing parties by a third party who is uninvolved in the conversation IF the two parties engaged in the conversation are in a location/position with a reasonable expectation of privacy. Check your state's eavesdropping statute, or similar law.
As far as some of these people saying that the police can say ANYTHING... that's not true. There are limitations and restrictions. Yes, the supreme court has decided (many times) that the Police can use ruse and deceit... with restrictions in an interrogation setting. There are fewer restrictions on a non custodial setting, but there ARE restrictions.

yes we can record interviews and no we don't have to tell you about it. the law states that as long as either the interviewer or interviewee knows that the conversation is being recorded the tape is legal. if neither participant knows then the information would be inadmissible.

Yes they can.
You would be surprised as to what liberties they can take when they are asking you questions.
They can lie, film, cheat, and knowingly mislead you. Anything they want short of physical contact to force a confession.
