I bought some smoked gouda cheese and not sure if I should peel away the casing before I serve it to my guest.

If it is naturally smoked odds are good that it isn't encased in wax or anything and it is perfectly ok to eat (you can wash it in a vinegar and salt mixture if you want. Just let it dry for a day or two). If it is just smoked flavoring added in it is probably encased in a mold inhibitor and/or wax, so just peel that off. The mold inhibitor may need to be taken off with a cheese slicer.

No that way it is easier to handle when someone picks up a piece. If you are serving it as a wheel. If not, yes. I am assuming that you are then going to slice it and arrange it on a platter or cut it into bite-sized chunks.

remove it...sometimes they use wax on the casing to keep the cheese moisture in

the brown rind can be eaten but be careful because sometimes there is wax over it....if so, remove the wax but not the rind....
