Are you thinking of making it a main course, or just making your side dish more interesting? Hard to add stuff to grits without really overwhelming the grits flavor. Grits purists will hate me, but I am a Yankee, so what do I know?
1. Add a little meat such as bacon, sausage, ham, shrimp or marinated grilled chicken. I was thinking tuna, but that may be overwhelming.
2. Instead of preparing with water, try using chicken broth, vegetable broth or tomato juice.
3.Prepare grits with water, orange juice or apple juice. Add honey, cinnamon and chopped dried apples (or diced fresh apples.) This would also work with raisins.
4.Search for some polenta recipes.

Try this for a savory approach: if making 4 servings, add 3/4 cup shredded sharp cheddar, three slices of crumbled cooked bacon and a 1/4 cup of your favorite mild or medium salsa. I usually put a pad of butter in the bowl before pouring the grits mixture into the bowl. Garnish with some ground pepper

I LOVE grits with butter and a poached egg on top. Add a little salt and a fair amt of pepper. . .yummy.
My niece and nephew eat their grits with butter, cinnamon and brown sugar, but I've never tried it.

Try crumbling up some bacon. Mix some scrambled eggs into it. Butter some toast and make a sandwich out of it. Cut up some pimentos into it. Mix it with rice. Stir those cute little cocktail weenies in it.

I add salt, fresh pepper, cayenne, and sometimes a slice or two of chopped deli ham.
(I love those little packets of instant grits too.)

we used to put sugar and milk on it and make it a breakfast cereal. Yes its great!
