Why not? I think I have done this before. I also use real mayonaise in place of the oil. It makes the cake more moist.

Cake and muffin recipes can be dressed up this way, but don't add more than a quarter cup of pudding per recipe. Yeast breads don't do well with this treatment, but sweet breads like banana bread or zucchini bread do alright. Again, don't add a lot of pudding because you're adding liquid and it's real easy to louse up the recipe and not be able to correct your mistake. Y'don't want to waste all those ingredients having to toss it out!
