i just started dating this great guy and i want to make him a special dinner,but he's cathlioc and i'm not.any recipes would greatly help.

Well, depending if he's Orthodox, or just really traditional or not, not only do you avoid meat, but also fat, dairy and eggs! But here is a menu that you can use either way...

Acorn Squash Soup

1 Acorn Squash
3 med. Carrots, diced
1 med. Onion, diced
3 stalks Celery
4 Garlic cloves, minced
1 cup fresh Parsley, diced
1 Tbl. Mint, crushed or diced
Nutmeg, Salt and Pepper to taste
Olive Oil or Vegetable Oil
1 cup Vegetable Broth

1. Boil Squash in 3 cups water for 20 minutes.
2. In large pan sauté Onions, Garlic, Celery, Parsley and Mint
3. Add broth
4. Scoop out Squash and add 3 cups Water, Nutmeg, Salt and Pepper. Boil 1 hour, then puree in blender or food processor.
If needed add more water (This will depend on size of squash)



Mussels Marinara

Serve this dish as a main course with green salad with a vinaigrette type of dressing and a loaf of crusty Italian or French bread brushed with olive oil and rubbed with a clove of garlic and then heated through in the oven. (Regular Italian and French bread is made with just flour, water, salt & yeast)

3 dozen fresh mussels
1 medium onion, thinly sliced
4 garlic cloves, minced
3 tablespoons olive oil
2 (28-oz) cans Italian peeled tomatoes, drained and chopped
1 C dry red wine
2 bay leaves
1 t dried basil
1/2 t salt
1/2 t crushed hot red pepper
1 T chopped fresh parsley
1. Scrub mussels well. Pull or cut off hairy brown beard from each mussel.
2. In a large saucepan, cook onion and garlic in olive oil over medium heat, stirring frequently, until softened, about 2 minutes. Add tomatoes, wine, bay leaves, basil, salt, and hot pepper.
Stir to mix. Partially cover and cook, stirring occasionally, until sauce thickens, about 20 minutes.
3. Add mussels; raise heat to medium- high, cover, and cook, stirring occasionally, until mussels
open, 5 to 10 minutes. Discard any that do not open. Spoon out servings of mussels and
sauce into individual bowls and sprinkle parsley on top. Serve immediately. (If you can find eggless spaghetti or linguini, feel free to serve the mussels on top of that as a pasta dish.)



The Best (Lenten) Chocolate Cake

3 Cups flour
2 tsps. baking soda
6 tbsps. cocoa
1 tsp. salt
2 Cups sugar
3 tbsps. vinegar
2 tsps. vanilla
3/4 cup oil
2 cups cold water

Measure flour, soda, cocoa salt, and sugar into large mixing bowl. Add vinegar, vanilla, oil and water and mix well. Pour batter into greased 9 x 13 inch baking pan. Bake at 350 degrees for 45
minutes.
For icing: buy Duncan Hines or Pillsbury frosting, Classic Chocolate or Vanilla (or whatever you like that fits the fast).

There are no typical "lent" foods, they only can't eat meat on fridays.
