A good quality balsamic vinegar dropped into the middle of a pool of wonderul olive oil and just dip in some crispy fresh bread, this is to die for. Use it as a salad dressing, put some on meat when it is nearly ready, freshly boiled mussles with some freshly chopped basil and a splach of balsamic vinegar, to posibilities are endless

1/2 cup balsamic vinegar
1 tablespoon soy sauce
2 tablespoons honey
2 cloves garlic, minced
Crushed dried red pepper to taste
1/2 cup extra-virgin olive oil
In a medium bowl or food processor, whisk together balsamic vinegar, soy sauce, honey, garlic, and red pepper. Add olive oil in a thin stream, whisking until emulsified.

Bruschetta:
roma tomatos diced
cucumber diced
garlic cloves minced
red onion diced
grated parmesean cheese
olive oil
balsamic
combine all ingredients into a bowl and drizzle with olive oil and balsamic vinegar serve with tortilla chips or a crusty baguette.
Marinated artichoke hearts over mixed greens:
1 can artichoke hearts
15 greek olives
feta cheese chunked
salt and pepper
olive oil
balsamic vinegar
toss together and serve over mixed baby greens.

I make a really good salad dressing with it.
It's 1/3 cup olive oil, 3 Tbsp balsamic, 2 Tbsp fresh lemon juice, some of the zest, 1 Tbsp Dijon, a spoonful minced garlic, a good squeeze of honey, salt and fresh pepper. Shake well and keep in the fridge.
Or just get a plate and drizzle olive oil and balsamic on it and dip French bread in it.

Cherry tomatoes, balsamic vinegar & sprinkle of sugar s&p, into a hot oven until toms are cooked.
Balsamic ,olive oil,french grainy musatrd, good shake. Salad dressing or just dip crusty bread in it.

some good ideas on this site. I know one where you put balsamic vinegar with olive or sunflower oil. You can use it as a salad dressing or for a dip.

The simplest thing is to use it as a dip with a really fresh white bagette - the bake-in-the-oven ones are great for this.
Also as a salad with sliced tomatoes (room temp to let their flavour come through) with plenty of fresh basil leaves torn over them... leave to marinate for a while so the toms soak up some of the vingear. This is great served at BBQs or as a simple starter with some fresh bread.
