Fresh ginger can be found in the produce section of most grocery stores. Look for smooth skin with a fresh, spicy fragrance. Tubers should be firm and feel heavy.

Long length is a sign of maturity, and mature rhizomes will be hotter and more fibrous. Avoid those with wrinkled flesh, as this is an indication of aged ginger past its prime.

To remove the skin from fresh mature ginger, peel with a paring knife. The ginger can then be sliced, minced or julienned. The taste that ginger imparts to a dish depends upon when it is added during the cooking process. Added at the beginning, it will lend a subtler flavor while added near the end, it will deliver a more pungent taste.

Get a pot with semi-dry dirt and put your ginger root in it. Do not cover it all the way. Most of the ginger bought from the stores are not grown in dirt. They have a special alien way, like Epcot.

Peel it then you can either chop finely, or use a carrot peeler to take little slivers off, or a cheese grater and use the part with the biggest holes.
