I eat out of my truck to eat healthier instead of eating all that fast food. Anyone have any good recipes they can share? I have a microwave and a small rifrigarator in my truck. I am just tired of eating soup's and sandwiches all the time. I have tried a few to the microwave meals and was not very happy with them.

Microwave meatloaf:

1 lb ground beef or turkey
1/2 tsp onion powder
1/4 cup ketchup
1 tblsp brown sugar
1 egg
1 tsp worcestershire sauce
1/4 cup bread crumbs

Mix meat, egg, onion powder, worcestershire, and bread crumbs together. Using a pie plate, put inverted custard cup in the center and shape the meat in a ring around the cup. Mix ketchup and brown sugar in separate bowl and top meat mixture with this. Cover with paper towels. Microwave on high for about 8 minutes, rotating dish half-way through cooking time.

You may want to prepare this ahead and refridgerate then pop in the microwave when you're on the road.

Baked Beef And Rice Marinara Recipe
Ingredients:
1 pound lean ground beef
3/4 cup sliced fresh mushrooms
1/2 cup chopped onions
1/2 cup chopped celery
1/2 cup diced green pepper
2 cups cooked rice
1 can (15 ounce size) tomato sauce
3/4 teaspoon ground oregano
1/2 teaspoon salt
1/2 teaspoon dried basil leaves
1/2 teaspoon garlic powder
3 slices American cheese


Directions:

Microwave Directions: Combine crumbled beef and vegetables in plastic colander; place colander over 2-quart microwave-safe baking dish. Cook, uncovered, on HIGH (100% power) 4 minutes; stir after 2 minutes.

Drain beef mixture; return mixture to baking dish. Stir in remaining ingredients except cheese. Cook on HIGH 2 minutes. Arrange cheese slices on top; cook on HIGH 2 minutes. Let stand 5 minutes.

Creamy Onion Smothered Pork Chops

Ingredients:

3 tablespoons flour
1 teaspoon sage
1 onion
1 can cream of mushroom soup
2 teaspoons beef bouillon
2 tablespoons A-l sauce
1/4 cup parsley




Directions:
Cut fatty edges of pork chops to prevent curling. Combine flour and sage. Dredge chops in flour. Place in casserole with tenderloin inside. Top with onion. Whisk soup, milk, bouillon, steak sauce and remaining flour until smooth. Pour over chops, coating all. Cover and microwave at 30% for 15 minutes. Turn and rearrange chops and push beneath sauce. Cover and microwave 15 more minutes at 30%, then let stand for 10 minutes. Skim off any excess fat and serve.

Mexican Meat Mix (to go with Chimichangas)
18 servings 9 cups of mix approximately ½ day 30 min prep

5 lbs beef roast (or combination of beef and pork roasts)
3 tablespoons vegetable shortening
3 onions, chopped
1 (1 ounce) can of chopped green chilies
1 (2 ounce) can green chili salsa
1/4 teaspoon garlic powder
4 tablespoons flour
4 teaspoons salt
1 teaspoon ground cumin

Preheat oven to 200 degrees F (95 degrees C).
Place roasts in a large roasting pan or Dutch Oven.
Do not add salt or water.
Cover with a tight lid and roast about 12 hours, until well done or cook roasts with 1 cup of water in pressure cooker 35 to 40 minutes.
(Crockpots work as well) Drain meat, reserving the juices.
Cool meat, then remove bones and fat and set aside.
Melt shortening in a large skillet.
Add onions and green chilies.
Saute 1 minutes.
Add green chili salsa, garlic powder, flour, salt and cumin.
Cook 1 minute over medium-low heat.
Stir in reserved meat juices and shredded meat.
Cook 5 minutes until thick.
Cool.
Put about 3 cups mix into three 1-quart freezer containers,.
leaving 1/2 inch space at top.
Seal and label containers.
Freeze and use within 6 months.

Microwave Polenta
This is an easier way to make Polenta Microwave Polenta Use microwave.With 700 or more power. microwave safe container, (round is better) Ratio.
2-3 servings 30 min 5 min prep

1 cup yellow cornmeal
3 1/2 cups water
1/2 teaspoon salt (less salt required if using soup base)
1 tablespoon rosemary (optional) or thyme (optional)

You may have to adjust ratio, depending on altitude and or type of flour.
I use a Pyrex round unit with lid, large enough to hold (7) seven cups water and (2) two cups cornmeal flour, Mix flour with water and salt , and microwave at f ull power for 22 to 26 minutes, (depending on power and quantity) stopping to stir every five to six minutes.
Suggestions.
You can substitute some broth or milk, not too much milk or it may boil over.
Makes 2-3 servings (2 with some leftovers).

Microwave Cornbread
Avoid heating up the oven when you quickly want some fresh cornbread with dinner; this is best served warm. It's also perfect when you quickly need some cornbread to make a stuffing.
6 servings 15 min 10 min prep

1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup canola oil
1 cup milk
2 large eggs

Combine cornmeal, flour, baking powder and salt in a mixing bowl; stir in oil.
Beat milk and eggs together, then mix with dry ingredients.
Pour into a six-cup plastic ring mold.
Microwave on High for four to five minutes.
Let rest five minutes before removing from ring mold.

1 lb chop meat
1 (16 ounce) can chopped tomatoes
1 can kidney beans
3 tablespoons chili powder
chopped onions
chopped bell peppers, to taste

salt
pepper

brown beef in microwavable bowl.
add onions, peppers, tomatoes w/juice, beans w/juice, chili powder, cumin, salt and pepper.
microwave at 70 for 9 minutes.
stir and microwave at 70 for 9 minutes.

Microwave Lasagna
6 servings 40 min 10 min prep

1 lb ground beef
1 onion, chopped
1 bell pepper, chopped
1 (8 ounce) can tomato sauce
1/2 cup water
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon basil
8 ounces lasagna noodles (approximately 9)
2 cups cottage cheese
1 (8 ounce) package mozzarella cheese
1/2 cup parmesan cheese

In a skillet on the stove: brown beef with onion and bell pepper.
Add water, tomatoe sauce and spices.
Simmer 5 minutes.
In a microwavable dish: layer the noodles (raw),sauce, cottage cheese and mozzarella.
Repeat twice ending with parmesan.
Tightly cover with plastic wrap.
Microwave on high for 10min or until the noodles are tender.

Microwave Meatloaf
2 servings 17 min 5 min prep

1/2 lb hamburger
1/8 cup barbecue sauce
1/4 cup oatmeal
1/2 onion, diced
1/2 egg
1/8 cup barbecue sauce

Mix first five ingredients.
Shape into round loaf in microwave safe dish [I use a glass pie plate].
Zap on High 12 minutes, or until cooked through.
Let stand 5 minutes, then brush with remaining barbeque sauce.
Note -- I like to add Italian seasoning, and change the barbeque sauce to spaghetti or pizza sauce. You can also add shredded cheese.

Rosemary Potatoes - Microwave
2 servings 21 min 5 min prep

1/2 tablespoon butter
1 clove garlic, smashed
1/2 teaspoon dried rosemary
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
3/4 lb red potatoes, quartered,about 4 cups

Place the butter and garlic in an 8 inch square baking dish.
Microwave at medium high (70%) 45 seconds or until butter melts.
Add rosemary, salt, 1/4 teaspoon black pepper and potatoes, toss well.
Cover and microwave at high 15 minutes or until potatoes are tender.

Microwave Tuna Casserole
1-2 servings 14 min 3 min prep

1 box macaroni and cheese mix
4 tablespoons margarine, cut in small pieces or butter, cut in small pieces (half a stick)
1 can cream of mushroom soup
1 (6 ounce) can tuna fish, drained
1 tablespoon lemon juice

Put the macoroni from the box into a Microwave Popcorn maker... I use a Anchor Hocking model.
Add enough water to cover the noodles (about 2 cups). Cook noodles on high for 10 minutes or until tender...then drain.
Return the drained noodles, butter or margarine, the contents of the cheese package, entire can of cream of mushroom soup (DO NOT add water). the lemon juice and the entire can of tuna.
Heat on high for 1 minute or until hot.
