Pumkin chili is sooooooooooo good and I bet no one will have the same as you.
INGREDIENTS
1 tablespoon vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped yellow bell pepper
1 clove garlic, minced
1 pound ground turkey
1 (14.5 ounce) can diced tomatoes
2 cups pumpkin puree
1 1/2 tablespoons chili powder
1/2 teaspoon ground black pepper
1 dash salt
1/2 cup shredded Cheddar cheese
1/2 cup sour cream
DIRECTIONS
Heat the oil in a large skillet over medium heat, and saute the onion, green bell pepper, yellow bell pepper, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese and sour cream.

Sausage Chili
1 tablespoon vegetable oil
1 cup onion, chopped
1 pound ground sausage
1 15 ounce can tomato Sauce
1 5.6 ounce can tomato paste
1 cup water
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
METHOD
Heat oil in large skillet. Stir in onion and sausage. Cook over medium heat only until onions are tender and sausage is no longer pink. Do not overcook.
Drain off excess fat, add tomato sauce, tomato paste, water, chili powder, cumin and garlic powder. Simmer over medium heat for half-hour. Somthing like this, but add a bit of something or substitute something to make it your own. Like make vegetable oil olive oil. Change the water into a broth.Add some different spices.

1/4 teaspoon black pepper
1 teaspoon salt
1 tablespoon chili powder
2 teaspoons oregano
1 teaspoon sugar
Shredded Cheddar cheese
DIRECTIONS
In large pan, cook beef, onion and green pepper until meat is browned. Drain excess grease. Stir in remaining ingredients, except cheese. Bring to boil. Cover, reduce heat to low and simmer for 20 minutes. Garnish with Cheddar cheese.

Fire Camp Chili
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
100 pounds Pinto beans
4 cups Jalapeno chiles with juice
Salt to taste
Onions, large -- chopped
40 pounds Meat (ham, sausage, pork
Bacon, ground beef -- etc)
4 cups Chili powder
Soak Beans overnight, then raise to a bOil on high heat. Add all ingredients
and simmer until tender (about 6 hours). Add Water as necessary. Stir
occasionally. Makes 60 gallons.

foodtv.com has some great chili recipes. Most chile recipes are easy to prepare. The hard part is obtaining all of the ingredients.

Take my advice - the voice of experience - if you haven't an exceptionally good recipe already and have not successfully made it several times over, forget the cook-off. You'll be up against world-class cooks and they take no prisoners!
