We are having granite countertops installed and I would like opinions on which is better AND why.
I have heard some complaints that with under mount sinks-bacteria can grow between the two.

Murray H- I did ask the "expert" but sometimes they only say want they think you want to hear to make a sale- So I put the question to "real" people who use the products. But thank you for the input- you made a good point about the ease of wiping it down.

We just renovated 3 bathrooms with granite: one with a hand-painted undermount sink and the other two with overmounts. They all are beautiful, but I prefer the undermount and now wish I had undermounted the other two. The only reason being is that the adhesive between the sink and the granite gets discolored and is noticeable in one (granite is black galaxy, adhesive is white so I can't bleach the adhesive) and it bothers me.

As far as bacteria is concerned, I wouldn't worry too much about that since there are so many anti-bacterial cleaners these days. I dry the undermount sink after use, mainly because it's hand painted and I want it to shine, lol:) Undermounts are very chic these days and I like the faucets mounted in the deck, too.

You would have the same problem with drop in sinks.

With a good quality silicon you should have no problems, and some are treated against bacteria and mould.

I prefer under mount as you don't have the lip to hinder wiping them down.

Ask for advise from the supplier he/she will know what's best. It will just be a matter of choice

My husband fits granite counter tops as his job. He says under mount sinks are more fancier and he says if they are fitted properly there should be no problems with bacteria starting
