The Scriptures say: "Dust".

Which is why the traditional words for Ash Wednesday are:

"Remember, O man, that dust thou art, and unto dust shalt thou return."

We all break down into a dry compound of chemicals. It may take quiet a while to get to this state but it is the final state.
Before we where educated this final state looks like ashes or dust. There fore the term ashes to ashes and dust to dust.

because the Bible says we were created from dust and when we die our body goes back to dust. I guess they just think ashes to ashes sounds better than dust to dust

Must have something to do with religious ritual. Ashes are not mentioned in the Bible only dust.
Perhaps it is a reference to cremation.

we are made of dust. as far as the soul, we are the soul. read Genesis chapter two verse seven. Jehovah blow the breath of life into Adam and he became a living soul. so we are the soul. Adam was made from the dust of the ground and so are we.
