alcohol evaperates when cooked to their is no alcohol actually in your cooking but if you really didnt want to use it then if it was white wine then you could try cider vinegar or apple juice and instead of red wine what about blackcurrant juice. Instead of dry sherry I have no idea.

Depends....are you trying to not cook with alcohol? If no wine or cherry, try whiskey.....other than that i'd go broth or butter.

I've always heard just more broth, or apple juice. I've heard the apple juice substitute works really well.
