This is an interesting question. Have never considered it before but I will now. I know that in European societies on the night of a virgin's marriage, the couple spends the night in the home of the girls parents and the sheets are kept afterwards as a sign of fulfilling the marriage covenant. If later on the husband would say that she wasn't a virgin when married the parents would bring the sheets before a judge and declare that this is the evidence. The sheets are called the Tokens of Virginity.

Deu 22:15 Then shall the father of the damsel, and her mother, take and bring forth [the tokens of] the damsel's virginity unto the elders of the city in the gate:
Deu 22:17 And, lo, he hath given occasions of speech [against her], saying, I found not thy daughter a maid; and yet these [are the tokens of] my daughter's virginity. And they shall spread the cloth before the elders of the city.

EDIT: Nowadays these rules are not generally followed in many parts of the world simply because Christ has freed us from the OT Laws. Therefore rather than keep the letter of the Law we try to keep the spirit of the Law. Hope this helps.

Sometimes women would cut themselves on their wedding night to make sure they bled the first time. Judaism, Christianity, and Islam all were invented during very patriarchal times. Women were considered to be little more than property. The reason why virginity is so important in those religions is because a woman who wasn't a virgin was considered "used goods" and therefore not as valuable.
Religion has really propagated these biases much longer than they had to. It's only been in the last hundred years or so that women have finally been given more of an equal status in society. However, even today, there a strong obsession about virginity that harks back to those dark ages.

The 'hymen' test is bloody stupid. In this day and age, a girls hymen ends up breaking way before pentrative sex because of the general active life style led by most kids. They girl can still be a virgin, even without her hymen, as it could have broken in childhood. Simple as.

It was a wedding night test, they where to show the bloody sheets. The stoning of nonvirgins is in the Quran, haven't seen it in the bible. And usually if there was any determining to be done, it was done by women.
And no, some girls have very tiny hymen

2. Hymen is ruptured during sex for the first time.
3. Their "determination," by your terms, is sex outside of marriage. Since God forbids this, committing this act is rebellion against God. Doing this constitutes that you know better than God.
