I don't have a recipe for you, but just wanted to say: I'm getting a crock pot this weekend, and thanks for the pork roast idea! I don't know if I'd mix the bottle of BBQ sauce in with all of that, though. Maybe you could use some broth and a little worchester for your base.

I'm planning on making a meatless chili with my crock pot. Found it on this other site I visit, and it gave me the inspiration to buy a crock pot.

INGREDIENTS:
12 oz. pkg. frozen protein crumbles
2 onions, chopped
2 (14 oz.) cans diced tomatoes, undrained
15 oz. can tomato sauce
1-2 Tbsp. chili powder
1 tsp. ground cumin
2 (15 oz.) cans red kidney beans, rinsed and drained
2 Tbsp. cornstarch
1/4 cup water

PREPARATION:
Combine all ingredients except cornstarch and water in 3-4 quart slow cooker. Cover and cook on low heat for 7-8 hours until vegetables are tender. Turn heat to high. Mix cornstarch and water until smooth and add to chili, stirring well.

Uncover and cook for about 15 minutes, until slightly thickened. 6 servings

sear the pork roast, throw it in the crock pot with the onions and cover with beer, mustard, honey and salt and pepper, cook for 5-6 hours on high or 12-14 on low, remove pork from crockpot, shred it up and mix it with the barbeque sauce

Easy enough!
First you have to have a box of slow cooker liners (they sell them by the plastic wrap for $1.98 or so for a box of four. This way you don't have to clean the crock pot (slow cooker).
Here we go:

Put meat in first on low with any seasioning that you like.
After 2 hours put in the remaining things that you have. Entire meal should take about 4-6 hours. Or until meat starts to fall apart. If potatoes and veg's are done b 4 meat just take them out and put on the side till the meat is done your way. I make this all of the time always with a bag of sauerkraut in it and sometimes noodles instead of potatoes. I will also put in fresh green beans and fresh mushrooms. Serve with mustard and horseradish. Delious.

leave out the bbq sauce and throw the rest in, makes a great roast, or put the meat and bbq in and make it a bbq sandwhich. i wouldn't put it all together, cook it on low all day
