Mini-Quiches
Ingredients:
8 oz Cottage cheese-small curd
1/4 c Sour cream
4 oz Shredded sharp cheddar cheese
1/2 c Bisquick (I used RecipEase)
1/4 c Melted butter
3 Eggs
Preheat oven to 350 degrees. Mix all ingredients with
Electric mixer. Grease mini-muffin tins or use Teflon ones.
Fill 3/4 full. Bake for 15-20 minutes or until brown.
Hints: Add onion, bacon, mushrooms,etc. May be frozen.
Reheat at 300 degrees or microwave for 3 minutes on high.
Note: These are great! Be sure to add cooked bacon and
Some diced onion. This recipe only makes about
1 1/2 Dozen so be sure to at least double!

One large platter with a couple of different types of cheese - some mild and some sharp, a couple of different type of cold cuts rolled up like peppermill turkey, prosciutto, hot sopressata, green and black olives in the center of it all, and baby carrots and celery sticks surrounding it. This will cater to all kinds of guest tastes.
If you want to up the wow with keeping the money factor down try making your own pate (which is unbelievably easy) instead of buying(which can be incredibly expensive) and serve with toasted french or italian slices of bread. There is a great recipe for this at the website below.
If you need a dip, a healthy, easy, addictive, and economical one can be a spicy bean dip or spicy hummus for which the recipes can also be found at the website below.
Or how about deviled eggs. It takes a little time but it sure is economical and most people do like these.

1 tube Refrigerated Crescent Rolls [8 oz]
1 pkg Smoked Sausage links [12 oz]
Separate the dough into eight triangles.
Place a sausage on wide end of each triangle and roll up.
Place, tip down on an ungreased baking sheet.
Bake at 400° for 10-15 minutes or until golden brown.

boneless skinless chicken breast halves, boiled and shredded
1 12 ounce bottle hot sauce
2 8 ounce packages of cream cheese
1 16 ounce bottle Ranch dressing
1/2 cup chopped celery
8 ounces Monterey Jack cheese or Cheddar Cheese, grated
In a 13x9x2 inch baking pan, combine the shredded chicken meat with the entire bottle of hot sauce, spreading to make an even layer.
In a saucepan, combine the cream cheese and ranch dressing over medium heat until smooth.
Pour this mixture evenly over the chicken. Sprinkle with chopped celery and then shredded cheese.
Bake uncovered at 350 degrees for 30-40 minutes or until bubbly. (Watch that the top doesn't get browned.) Let stand 10 minutes.
Serve hot or warm with Doritos "Scoops" (you need a sturdy chip for this!) or celery sticks.

Spinach Dip
1 packet Hidden Valley Original Ranch Dips Mix
16 oz. Sour cream
10 ounces Frozen chopped spinach, thawed and well-drained
8 oz. Water chestnuts, rinsed, drained and chopped
1 round loaf French Bread
Fresh vegetable sticks
Stir together dips mix, sour cream, spinach and water chestnuts.
Chill 30 minutes or until just before serving.
Cut top off the bread and remove center (using firm bread pieces as dippers). Fill bread bowl with dip. Serve with cubed bread and vegetables.
Makes 2 cups

Zesty Chili-Cheese Dip
16 ounces pasteurized prepared cheese
1 (15 ounce) can chili with beans (or no beans if you prefer)
1 (10 ounce) can diced chilies with tomatoes
assorted cut up vegetables and tortilla chips
Put the first 3 ingredients into slow cooker on low for 2 hours. Change setting to warm. Mix with wooden or plastic spoon. Serve with tortilla chips and vegetables.

How about Paula Deen's fried ravioli. Ooh, yum and so easy.
Ravioli:
1 pkg. frozen cheese ravioli
1/2 c. milk
1 egg
salt
pepper
2 C. ground pecans
1 C. grated Parmesan cheese
Marinara:
1 Jar Marinara Sauce (spaghetti sauce)
1/2 C. heavy cram
Mix marinara sauce and heavy cream. Heat thoroughly. Next place frozen ravioli in boiling water for two minutes. Remove and place on paper towel to drain. Next, beat egg and milk together until well blended. Dash with salt and pepper. In separate bowl, toss pecans and Parmesan cheese together. Toss ravioli through the wet mixture and then through the dry mixture to coat. Fry in deep fryer for about 2 minutes or until golden brown. Serve with marinara for dipping.
This is so good and easy. I have served it at several get together and everyone raved over it. Good luck.

1) canapes- mini toast slices with anything you like on top, best suggestions are blue cheese mousse(made with half portion blue cheese and half cream cheese mixed well), fois gras, or even better baked with white soft cheese and fresh peppers.
2) Fried muscles with red pepper dip: marinade muscles in Triyaki marinade mixed with a little soy sauce and 3-5 drops of Tabasco. After 1 hour put them in flour, then dip them in the marinade again and in fine bread crumbs; dip fry to golden brown crust color. For the dip you'll need 2 sweet red peppers, vinegar and olive oil all mixed in blender to make a smooth creamy dip.
3) shrimp toasts : fine small tortillas or Chinese rise ones used for spring rolls (1 for each), 2 packs of cream cheese, small shrimps(ready to cook), chili pepper, and finely sliced spring onions. Mix everything and put 1tbs in each tortilla. Roll closing the sides like an envelope and bake or fry till it gets golden and crispy.

Here are some great recipes...always a hit at parties
Stuffed Mushrooms
20 large mushrooms
4 tablespoons butter or margarine
2 cloves garlic, chopped
2 tablespoons fresh parsley, finely chopped
1/4 cup parmesan cheese or romano cheese, grated
1/2 cup italian seasoned dry bread crumbs
Wipe clean mushrooms with either a mushroom brush or a very slightly damp paper towel.
Carefully remove stems from mushrooms and chop stems.
Place butter and garlic into a heated skillet and let butter melt, stirring.
Add chopped mushroom stems and saute until lightly brown.
Add parsley,stir,and remove from heat.
Add cheese and stir to combine.
Add bread crumbs, stirring until mixture is crumbly.
Lightly fill each mushroom cap with the sauteed mixture, but don't pack tightly.
Set on a rimmed cookie sheet lined with foil and bake in a preheated oven at 350 F for about 20 minutes.
Spanikopita Triangles
1/2 cup vegetable oil
2 large onions, chopped
2 (10 ounce) packages frozen chopped spinach, thawed,drained and squeezed dry
2 tablespoons chopped fresh dill
2 tablespoons all-purpose flour
2 (4 ounce) packages feta cheese, crumbled
4 eggs, lightly beaten
salt and pepper
1 (24 ounce) package phyllo dough
3/4 lb butter, melted
Preheat oven to 350 degrees F (175 degrees C).
Heat vegetable oil in a large saucepan over medium heat.
Slowly cook and stir onions until softened.
Mix in spinach, dill and flour.
Cook approximately 10 minutes, or until most of the moisture has been absorbed.
Remove from heat.
Mix in feta cheese, eggs, salt and pepper.
Lay phyllo dough flat and brush with butter.
Place a small amount of spinach mixture onto each piece of dough.
Fold phyllo into triangles around the mixture.
Brush with butter.
Place filled phyllo dough triangles on a large baking sheet.
Bake in the preheated oven 45 minutes to 1 hour, or until golden brown.
7 Layer Bean Dip
3 medium ripe avocados, peeled,cored,mashed
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup mayonnaise
1 cup sour cream
1/2-1 package taco seasoning mix
2 cans bean dip
2 medium tomatoes, chopped
1 bunch green onions, chopped
1 (3 ounce) can black olives (sliced or chopped)
1 (8 ounce) package shredded cheddar cheese
Mix avocados, lemon juice, salt, and pepper.
Mix mayonnaise, sour cream, and taco seasoning mix.
Layer ingredients as follows.
Bottom layer: Bean Dip.
Second layer: Avocado mixture.
Third layer: Sour cream mixture.
Fourth layer: Tomatoes.
Fifth layer: Onions.
Sixth layer: Olives.
Seventh layer: Cheese (I like to use Colby Jack cheese).
Top with extra sour cream/olives/salsa, etc. if desired.
Serve with tortilla chips.
**This seems to be a little bit better if you can chill it for a few hours or over night to let the flavors intensify**.
