I have two favorites - one I use as a main dish, one as a side dish.
Main dish
1 pound dry red beans or dry red kidney beans
1 meaty smoked pork hock (I like to use a ham bone when we are finished with the ham but there is still meat on the bone)
1 medium onion, chopped
1 medium green sweet pepper, chopped
2 stalks celery, chopped
2 bay leaves
1/4 to 1/2 teaspoon cayenne pepper
4 cloves garlic, minced
1/4 teaspoon salt
5 cups hot cooked brown (you can also use white rice)
Rinse beans. In a large Dutch oven, combine beans and 6 cups water. Bring to boiling; reduce heat. Simmer for 2 minutes. Remove from heat. Cover and let stand for 1 hour. (Or place beans in 6 cups water in Dutch oven. Cover and let soak in a cool place for 6 to 8 hours or overnight.)
Drain and rinse beans. Return beans to Dutch oven. Add pork hock, onion, sweet pepper, celery, bay leaves, cayenne pepper, garlic, and 6 cups fresh water. Bring to boiling; reduce heat. Cover and simmer about 1-1/2 hours or until beans are tender, stirring occasionally. (Add additional water during cooking, if necessary.)
Remove pork hock. When cool enough to handle, cut meat off bone; coarsely chop meat. Discard bone (or give to your dog).
Return chopped meat to Dutch oven. Return to boiling; reduce heat. Simmer, uncovered, for 30 to 40 minutes more or until a thick gravy forms, stirring occasionally.
Discard bay leaves. Stir in salt. Serve the bean mixture over hot cooked rice.

Side Dish
1 slice bacon, chopped
1 cup chopped onion
1 14-ounce can chicken broth
3/4 cup regular brown rice
3/4 cup sliced celery
1/4 teaspoon salt
1/4 teaspoon bottled hot pepper sauce
1/8 teaspoon ground black pepper
1 15-1/2-ounce can dark red kidney beans
1 small green sweet pepper, cut into bite-size strips
In a 10-inch skillet cook and stir bacon over medium heat until bacon is crisp. Reserve 1 teaspoon of the drippings in the pan. Drain bacon on paper towels.
Cook onion in reserved drippings until tender but not brown. Add bacon, broth, uncooked rice, celery, salt, hot pepper sauce, and pepper. Bring to boiling; reduce heat. Cover and simmer for 40 minutes.
Add the undrained beans and sweet pepper strips. Simmer, covered, for 5 minutes more. Serve immediately.

Red Beans 'n Rice
Ingredients:
1 pound dried red beans
1 ham bone or
1 lb. smoked sausage, sliced
1 cup chopped onions
1/4 cup chopped green onions
1/2 cup chopped green peppers
salt and pepper to taste
cooked rice
Wash and sort out beans. Add enough water to cover beans completely in a 4 quart saucepan and soak overnight. The next morning, heat the beans to a slow boil.
Add all the remaining ingredients and cook slowly for 3 hours. Add more water during cooking, if necessary.
The beans are done when they become soft and the water boils down to form a thick gravy.
Season with salt and pepper. Serve over cooked rice.

There are two ways to do red beans & rice. With meat. And no meat. If you want to do it vegetarian style, just leave out the meat!
Clean the beans. Wash them. Put them in a pot and fill it with water till it's 2 inches above the beans. Let it sit overnight.
Add 1/2 T. salt, 1/2 t. cayenne, a couple bay leaves, ham hocks, no onions, but lots of garlic, & black pepper to taste. Cook it, boil it, till the ham hocks are falling off the bone. Or until the beans are soft if you do it that way.
Pour it over a bowl of rice.

There is a good recipe for Puerto Rican Style beans at the website below or a spicy bean salsa. You can use any kind of bean you like. There are also recipes for sides to eat along with the beans and white rice such as fried plantains or sorullitos which are fried corn fritters. They are also pretty simple and economical

u can mix vegies in a oven dish/trey and add rice and water with paprica, herbs fresh and dries and make a giaveg ..or a traditional canolini beans soup/stew in a pot with water paprica again onions garlic parsley and seasoning, keep it vegitarian with not bacon ....
ooooooo doma pepers ... stuffed peppers ... with rice and other veg ...
