Duane Gish is an apologist who tries to explain away the fossil record. He is the Vice-president of the Institute for Creation Research. His "research" methods have become an embarrassment to thinking Christians.
For those "Christians" who feel threatened by Science, Logic, Rational Thought, and maybe even Aluminum foil, Duane Gish is a hero who can do no wrong. For everyone else that lives with faith in God and a mind for observation, a "Gish" refers to someone from the fossil-fearing sector of Christianity.
It is being worse then an apologist, it is someone who blindly nods to an apologist because they are being told what they want to hear. It began as a more pleasant way of saying "idiot".
Within some circles it has become an insult. Often, it is used more loosely in groups of younger Christians who don't know the reference and have only heard it being applied roughly to obviously idiotic people.

Are you sure "gish" is a word? I'm a Christian and I've never heard of it and that combination of letters doesn't offend me.

They consider it a shorter word for "Jesus", and it is offensive to use the Lord's name in vain. Like saying "Oh my God" and "Jesus Christ" or even saying "Jee Whiz"
I try not to be offensive to anyone (most of the time) and say things like "oh, man" or "darn it"
In the South they often say "dagnabbit"
Ideally, one could go through life without ever using expletives.
After researching Dane Spade's answer, I stand corrected. Duane Gish is offensive to Christians.
