I am doing an animal course and work with animals and sometimes I feed bloodworms to axolotl and just would like to know why?

They are a high iron and protein food, but not a complete protein (does not contain all amino acids). Most freshwater fish and amphibians that are carnivorous or omnivorous will never refuse them. These are actually a larval stage of a small fly (midge), so are often a part of their "wild" diet. Also, because these are available in frozen cubes, they're convenient.

I've used them to raise larval spotted salamanders and axolotls and for conditioning fish prior to spawning them.

Because they aren't a complete protein, I hope yours are getting other foods as well. The ones I've had also ate turtle pellets as the main part of their diet, but these don't have a "natural prey" look to them for young animals - plus they don't move. I've only had success with pellets with adults.

Because its hungry? Its only an immature form of salamander. They'll eat pretty much anything from the 'meat' family. I used to feed mine strips of steak when the ground was too frozen to dig up earthworms.
