I'll answer regarding Britain - being British I can only speak for changes here!

Firstly, the twentieth century brought the Labour Party which at that time did advocate workers' rights, and to cut a long story about politics short, over the years, basically they passed a number of acts which raised pay for the workers, gave them more time off, put a limit on the daily number of hours they could work and organised a health service.

With more money and days off in the year, the workers not only had the time to take holidays, but the money to afford them too.

The twentieth century can also be seen as the climax of the Industrial Revolution in Britain in terms of progress in transport. The railway was spreading across Britain rapidly in the 1900s, the invention of the car, particularly Ford's production line system invented in America providing cars that the ordinary man could afford also gave people a mode of transport. This meant people could journey around Britain on their days off.

Later commercial aeroplanes gave people chance to fly to other countries - if they were rich. Towards the end of the twentieth century cheap airlines, for example EasyJet or RyanAir started offering cheap flights. Economically, the value of the pound vs other European countries meant that places to stay abroad were often just as cheap or cheaper than staying in Britain.

So if the accomodation abroad was cheaper and a cheap flight with Stelios was available, many Brits found that a holiday abroad didn't cost more than a holiday in Britain. And considering that abroad you could have the sunny weather more or less guaranteed, British holiday habits changed - from a holiday in Blackpool or Brighton or similar, to the South of France, or the Balearics or Spain.
