Well any music with lyrics is considered a form of poetry, however, pertaining to your question, there are many composers who write music around an existing poem by a different author. This was particularly popular in the renaissance. One of the most famous of these composers was named John Dowland. Sting has recently released an album on which he has recorded a Dowland song entitled "In Darkness Let Me Dwell". This piece was conceived around an existing poetic text which Dowland enhances with music and text painting.
