I'm sure you mean a medieval knight, not a modern one!

Here is a good resource for knights; you can navigate around:
http://www.middle-ages.org.uk/middle-ages-knights.htm

You could begin with something like:

"Tomorrow I will be twenty-one years old, and I shall become a knight. I have served my lord well; I have cared for his destrier (horse), his armour and his person, and I have borne his shield in battle, even receiving a wound myself."

You could add a little by saying you saved your lord's life by pulling an arrow out of him!

Day Two could be preparing for the knighthood, the vigil, ceremony, etc. Then there would be feasting and jousting, etc. Look here:
http://www.middle-ages.org.uk/order-of-knighthood-ceremony.htm

You could be knighted by anyone higher than you, even a king. Try Edward III, in the heyday of Chivalry:

http://en.wikipedia.org/wiki/Edward_III_of_England

I'm sure you'll find something imaginative to put in your diary.

Elizabeth 2nd is THESE days, or at least within the past 55 years. Ask for a reprieve lest thy teacher behead thee. Then find out exactly what she wants. You CAN NOT do this by tomorrow.

Knights were wealthy young men. They had expensive armor, horses, weapons, and training. They spent much time training like jocks do today. They were also kinda soldiers, so they would be in battles, lead troops, ensure security for castles, and study the art of war.

one day you go hunting and catch a deer and have a huge dinner in the evening with all the dignitaries

the next day you go courting your lady and she says she will only accept your love if you prove your bravery

so the third day you need to go out to a quest to find and kill a dragon

you fight the dragon the entire fourth day, it gets you wounded but you kill it and take all its treasure

and the fifth day you ride home, victorious, with dragon's head and a lot of treasure and your lady is all happy and because she's a gold digger she marries you for all the treasure...

and they lived happily ever after...
