i assume you mean QUALITY since QUANTITY is a measurement of amount

none - all physical qualities can be measured ( and you supply the quality and i'll supply the units - lol )

as for the answer above all of the supplied examples can be measured as can all things EXCEPT VACUUM - the absence of all things ( so not physical ! )

gravity - units of 'G' as in 100G .001G
dark matter - MASS
super string harmonics - FREQUENCY
smell ( n/a ) detection of odor molecules by sensory apparatus ( number - mass - distribution / parts per million )

numbers ( now that one's funny ! ) defined by NUMBERS ( mathematics IS a way to measure - lol )

entropy - is a thermodynamic concept not a property ( you may as well say thought ) and not physical - but the transfer of energy ( or heat ) that characterizes the application of entropy can be measured

Not sure what is meant by physical 'quantity', if you mean accepted concepts without units could think of gravity, dark matter and superstring harmonics.

the physical quantities which do not have units are spcific gravity or relative density, reynolds number,eulers number,froude's number,mach's number,webbers number,dielectric constant.
the numbers alone are called dimensionless numbers.
