In my opinion, lots of groups known primarily for electric guitar playing had some great acoustic stuff as well. "The Battle of Evermore" by Led Zeppelin, "Angie" by the Rolling Stones, "Rocky Raccoon" by the Beatles, the acoustic version of "Anarchy in the UK" (available on "The Swindle Continues") by the Sex Pistols, and a number of songs on the "More" soundtrack album by Pink Floyd. As far as more recent stuff goes, while it's not entirely acoustic, the "You Are Free" album by Cat Power is brilliant.

"Dust In the Wind" by Kansas is my favorite acoustic song.
Some of the others that have been mentioned, like Neil Young & James Taylor, gave a lot of great acoustic performances.
