Could be the rev limiter kicking in

Near 'full throttle' means very high revs.

I bought a one-owner Miata, low mileage. It did/does the same thing. When I let off the pedal, just a bit, it stops 'bucking' and resumes it's speed.
I think, but don't know for sure, it's a built-in safeguard to keep from damaging or blowing your engine.

Please explain what you mean by bucks. If this bucking occurs as you floor it, then it is simply the force of the acceleration. If it occurs when you are on the freeway going about 120 then it is the govenor kicking in. If you have a turbocharger there will be potentially bucking when the boost kicks in.

I have seen some blowoff valves sticking causing some very wierd boost issues. also found maf sensor either dirty ( clean the hot wire with brake cleaner) or faulty.
some intake gaskets have also blown out near the front (by the belts) of the engine on the bottom.
let me know whatcha find.

Electronic Governor. Those actually start cutting fuel to the engine when they reach their preset limits.
