whats your definition of greatest?... innovation, technique, speed, soul, ..... jimi hendrix and evh are such influential guitarists in media and mainstream guitar hype, (and deservedly so). jimi changed the world of rock guitar, and eddie spawned thousands of guitar players. but jimi died too soon, and eddie quit being innovative just before dave left, apparently choosing alcohol over really pushing the "envelope" and using the passion and instinct that made him such a FORCE. so many guitarists that have stayed true to music... jeff beck, steve vai, danny gatton, stanley jordan, hundreds of guys who OWN the guitar and are masters of the craft in their own way, but don't get airplay, influence people every day.
anyway... one word...JIMI... oh yeah, jimmy page had a pretty good band ... joe perry and brad whitford... srv (nuff said) hell, les paul, chuck berry , bo diddley and muddy waters invented the electric guitar as we see and hear it today... tommy emmanuel does things with an acoustic that can't be comprehended unless you see him live.....
sooooo... jimi did it first, and with passion and soul, technique, his own style and reckless abandon, invented what everyone else has tried to re-do since.

Wow! There are so many, and from so many eras. Some of the greats in my opinion (and I'm probably leaving out a lot), are:
Duane Eddy
Steve Stevens (the one that played for Billy Idol)
The Ventures
Dick Dale
Mark Knoppler(Dire Straits)
Whoever the guitarist was for Savatage
