There's loads of info on making "gingerbread"-type houses with polymer clay on this page of my site:
http://glassattic.com/polymer/houses_structures_gingerbread.htm
(... click on the subcategory *Gingerbread Houses, etc*...)
and a bit more on this page:
http://glassattic.com/polymer/Halloween_etc.htm
(... click on *Scenes, Dioramas & Houses* then scroll down a bit...)
(many of the ideas could be used for other types of clay too)
The fastest, easiest way might be to make it over a box armature... use a milk carton or other box cut down to the size you want; then just leave it in after baking. There should be instructions on one of those pages... or look on the page called Vessels, then click on Boxes > Forms Left In)
Have fun!

make slabs of clay that can fit together, then mix some clay and water, make little slits along the edges of the slabe and put the water mixture on there and fit the pieces together, it works my mother was an art teacher and taught my how to do this when i was a kid.

The only thing you really need to worry about is the sag from the clay.
Use tooth picks over windows and doors to keep them from sagging.
Also, tooth picks to support the roof.
