Great question there, but difficult to choose only three! There are quite a number of good footballers in Europe, extremely good players - so to choose only three is quite a task.
My choice would be (in no particular order):
Didier Drogba (Chelsea)
Samuel Eto' (Barcelona)
Thierry Henry (Arsenal)
This is my best selection.

I'm basing my answer on performance in the Premier League this season. Being a Gooner, having to chose these three kill me, but the numbers speak for themselves:
1. Drogba's having a beast of a season--17 goals/3 assists in 27 games
2. Cristiano Ronaldo--15 goals/8 assists in 24 games (but we did the double on them this season!)
3. Frank Lampard--10 goals/9 assists in what seems to be a quiet season
I wish I could include Henry in my top-three-of-the-moment, but he's just not up to his usual standards so far, only 10 goals and 5 assists in league games.

If I were starting a team and had to pick 3 people I'd take John Terry (captain, beast), Wayne Rooney (young, never gives up on the ball, can score from nothing), nad Owen Haregraves (hold the middle, distribute up the field)
The 3 most talented are probably Ronaldhino, Ronaldo (the flaming one not the fat one), and I guess Rooney
