There's plenty of good ones, some of my personal favorites are:
The Fumble-Roosky (Nebraska)
The Statue of Liberty (run most recently by Boisie State)
The Hook and Ladder (run most recently by Boisie State)
The Lonesome Reciever (run by Rice in the '60's)
Those are just the designed ones...the spontanious one like The Play, the Immaculate Reception, Flutie's Hail Mary, Vick's run against the Vikings, and Marino's fake spike are great too.

I have to go with Marino's fake spike. Then he threw for a touchdown which won the game.
