One website said carbon was black, and another said that it's the color of what ever light wave it picks up. I really need this for my project.

I'm no scientist, but I am guessing that carbon has a range of colours since a diamond is made of carbon and displays a range of hues (ranging from clear to red etc). Where as the carbon used in say a pencil displays a dull grey property or even black.

Well, carbon can be as black as coal or graphite. On the other hand, diamonds can be very translucent.

It seems it depends on which crystal structure form carbon takes,

It is black.
burn a piece of paper or matchstick. What's left is carbon.

An object that is black, essentially absorbs all visible light, and thus appears black.

Hope that helps.

(and when is carbon (not carbon dioxide or carbon monoxide) a gas?

ok, enough of all you people talking out your ears.

Carbon has different forms (allotropes). It can be diamond, graphite, or substances known fullerenes. Graphite is black, diamonds are clear (colored diamonds are because of impurities). Bulk fullerenes look black, but I am not sure if this changes depending on size or manufacturing technique.
