Most auditions give you the script before hand so you can practice the role.

Cold reading is the opposite, you go in and are given the script for the first time and expected to do the role.

A cold reading is when the person auditioning is given a script with very little or no time to read over the script. It's an impromptu reading with no prior knowledge of the material.
