Nerves close to the sense organ (skin, in the case of touch) pick up sensations from the environment and transmit electrical energy to the brain which learns to recognize what is being sensed, in this case, touched.

Same with sound waves being transmitted via vibrations to the eardrum, picked up by auditory nerves, light being sensed by optic nerve via the retina, etc.

All your senses receive stimulus from your environment. Your nerves pick up these stimulants in your environment and quickly send electric signals through your network of nerve cells to your brain, which processes these signals.

Nerves on your skin can sense things such as pressure and heat and pain, nerves in your eye senses light, nerves in your ear (your ear drum) senses vibrations caused by sound. Nerves in your nose can sense different smells based on the particles in the air. Nerves on your tongue sense different tastes.

Basically, all your senses use electric signals from your nerves. An outside stimulus disrupts the resting potential in the axons of your nerve cells, causing an electric "action potential" to travel through the axon. These action potentials can be passed from nerve cell to nerve cell through chemicals called neurotransmitters. Eventually, all these signals reach your brain, which is basically a ganglion of nerves. Your brain processes these signals and that is how you can feel and taste and touch and hear and smell different things in your external environment!
